About Bottarga

We are proud to intoduce Cortez Bottarga. This is the first producer to be located in the U.S., crafted in Florida, using the same methods used for thousands of years. Bottarga is striped grey mullet roe which has been salt-cured and sundried. The tradition dates back to ancient times: Egyptian murals dating from 10th century B.C. depict fisherman executing the lengthy process in which bottarga is made. Since then, the pressed dried fish eggs have become a staple of Mediterranean cuisine – often dubbed the “Caviar of the Mediterranean”.
