The paste below this cumulus rind is savory and satisfying, pasty and thick. Initial flavors of rich butter and salted brine quickly slow to sweet hay with a zippy funky finish. Produced in the  Loire Valley, where healthy amounts of rain and warm summers combine to create the perfect condition for raising goats, Saint-Maure (Saint-MOHR) is a true epitome of excellence.
