Flora gets her name from Judy Schad’s grandmother – Ms. Flora Hemmer - a country cook and gardener who made cheese and butter from her neighbor’s milk. The newest addition to Judy’s selection of aged chevre, Flora has a lovely aroma that is, well, floral. The paste is unabashedly rich and moist like a double stuffed cheesecake and as it ages the cream line will become mobile, dripping out from around the lactic core. Notes of honeysuckle and hay blend into a savory and toasted mushroomy finish.
