This Loire Valley goat’s milk Tomme from French affineur Rodolphe Le Meunier is budding with a sweet and tangy paste but is mellow and lighthearted. Aged roughly 4 months, Jeune Autize is smooth and sweet and possesses the essence of hay and pasture. The washed rind is a striking tangerine orange and when eaten gives a delightful element of cracked peanuts! Essentially a goat’s milk Morbier, Jeune Autize’s paste is divided by an iconic thin line of grey vegetable ash reminiscent of Carrera marble. A piece of edible art.
