From the village Illas in Northern Spain, this lightly blued cow’s milk cheese is rare and delicious. Also know as Queso Azul Asturiano, it is made from pasteurized milk cows milk, with a quick dose of sheep’s cream, that is aged for sixty days in Asturian caves. The production of these cheeses is entirely Artisanal and limited to only a handful of singular farmhouse producers. Ours is made by Leon Alvarez, the most prominent producer of Azul Asturiano in Alvarez. It resembles an Italian-style Gorgonzola and has a strong olive flavor and pungent aroma. Lovingly known amongst cheese mongers as “La Peril” the cheese can exhibit some characteristics of meaner blues like Cabrales. The slightly crumbly texture becomes is significantly more creamy in the finish. Pair this with Beaujolais or Cabernet Sauvignon.
