Leonora is an exceptional goat cheese from a small artisanal producer in Leon, Spain. Oscar has outdone himself with this brick shaped, natural mold rind cheese which envelops a compact white paste. The texture is similar to cheesecake, or even more accurately, dense ricotta. Both of which imply a quality of dessert because it’s hard not to experience this cheese equivalently. The artisanal production is evident from the layered, complex flavoring and long, lingering finish. Smooth, full bodied with just the perfect balance of acidity and tanginess. Perfectly paired with white wines!
