Raw sheep’s milk farmstead pecorino, aged 3-5 months

Produced by Fattoria Lischeto, an agriturismo near Balze Volterra in Tuscany, Pecorino Gessato is a smaller format pecorino made with raw milk on the property. Of particular note is the aging on this cheese – which is to say it’s the youngest pecorino made with raw milk we’ve encountered in the US. Flavors are bright and juicy – tangy from the micro-flora of the cheese, but without any strong lanolin or oxidized sheep fat flavors.
