About Prosciutto di San Daniele - Bone-In, 24 Months (Special Order)

Natalino Dall’Ava has been producing prosciutto within the commune of San Daniele in Italy’s most North-Eastern area of Friuli since 1955, 15 years before the process was DOP recognized. The region’s Po Valley is where these hogs get fattened to 350 lbs over a period of 9 months off a custom diet of cereal and whey from the valley’s local dairy herds. Doc Dall’Ava cures these Legs with Adriatic sea salt and ages this profile for 24 months! Merging breezes from the cold northern Alps and salty southern Adriatic Sea are fundamental to the curing process and another big part of what makes these legs so distinct, enhancing the vivid crimson color and sweet intense flavors.
