Smoked, ash ripened loire valley chèvre, aged 21 days 

We tried to get Rodolphe to name this cheese “Le Stick” which is regional slang for blunt – it didn’t make the cut. This is essentially a non-AOC Saint Maure de Touraine that Rudy sources fresh (green in cheesespeak) from his longtime partner Cloche D’or. Before Rudy’s team gently builds the rind, the ashed cheeses are smoked over birch at his facility in Tours. The result is a super-clean geotrichum rinded chèvre with the perfect hint of smoke.
