About Banyuls Vinegar
Banyuls’ vineyard spans the southern French Coast, where the Pyrénées mountains and the Mediterranean sea meet. The famous, port-like wine from which it is made is comprised of Grenache noir, Grenache gris and Carignane grapes. The evolution to wine and then from wine to vinegar occurs slowly over a 5-6 year period. Aged outdoors in Oak Barrels for 4-5 years, exposing it to both high summer and cold winter temperatures, accelerates the aging process. Around it’s 5th year, ancestral Vinegar (Vieux Vinaigre) is added to inoculate and help the final transformation into a full-fledged vinegar. The taste is strong, the bouquet complex with a powerful gingerbread smell and notes of vanilla, fresh walnuts, and a hint of dried currants.
Ingredients: 100% Banyuls wine vinegar. Contains sulfites.
