After internships at Cowgirl Creamery, Ticklemore, and Goat Lady Dairy, Sarah Marcus’s passion for cheesemaking led her to Yamhill County, Oregon. Briar Rose Creamery was built from the ground up, and is surrounded by rivers, forests, and farmlands. Everything is hand-made from start to finish to achieve the best flavor and texture, as well as highlight the seasonal qualities of their small batch cheeses.
Butterbloom is a bloomy rind cheese made with Guernsey cow's milk with a texture that ranges from semi-soft to soft. It has a delicate, fluffy rind, and a rich, creamy mouthfeel. Sweet notes of buttercream frosting, papaya, and creamed corn are balanced by hints of oyster mushroom and crème fraiche.
