One of the central concerns for Michele Perinotti of gli'Aironi is the environment that their farm is part of. They sit on a huge wetland in Eastern Piedmonte. This area is home to the Grey Heron (Aironi Cenerini), hence the name of the company. Beyond being good stewards to their local environment, gil'Aironi concentrates on using old world methods and equipment, like stone mills, and new world methods, like oxygen free packaging, to produce some of the best rice in the world.
