Raw cows milk strong ale washed elemental tomme aged 5-8 months

Just like its maker Peter Dixon, Hermit is sweet, rustic, rough around the edges and enjoys a nice strong glass of Ale. Young cheeses are washed with Rowdy Monk – a Belgian Quadrupel made by Hermit Thrush Brewery which result in a dark brown burnished rind that sings with residual yeast and booze sugars. Like all other Parish Hill cheeses, Hermit is raw milk and produced using native, house made cultures. Flavors are sweet, complex, and lasting.
