Blakesville Creamery is a relative newcomer to the cheese world (2020). It comes as no surprise that their ascension to the stars has been guided by veteran cheesemaker Veronica Pedraza. Veronica is making amazing cheese with milk from the farms herd of nearly 1500 Saanen mix goats. The farm itself is pretty special as it is part of the Brico Fund which has a focus on thoughtful land use and environmental protection.
Linedeline is a 3.5 pound wheel of ash-ripened goat cheese with a bloomy rind. In addition to the ash on the rind, a thin line of ash runs through the center of the paste, creating a beautiful and striking cut wedge of cheese. Velvety and rich, Linedeline's rind gives it a slight mushroominess, while it's tangy paste showcases notes of crème fraiche and lemon.
