Mateo Kehler of Jasper Hill designed Moses Sleeper to be reminiscent of a classic Normandy Camembert, complete with notes of cauliflower, roasted nuts, and crème fraiche. His success is immediately evident when handling this beautiful specimen. Thin-rinded and petite, Moses Sleeper tends to bulge at the brim and it’s thick sticky paste clutches onto itself like a batch of fresh dough. Digging in, we applaud the unique and distinct flavor of toasted sun-flower seeds accompanied by a flowery mushroom bouquet. This is no common brie, and if you don't watch out Moses Sleeper may just haunt your dreams.
