About Mount Raclette

Orphee and Paula make the cheese in Eastern Wisconsin . Orphee (French native) comes out of Tech and Paula (Wisco native) comes from 6 generations of dairy farmers. The cheese is made with raw milk and is aged on wood boards. It is washed a few times a week developing a mild funk. The milk comes from a single herd and they make the cheese on the farm with milk that is coming directly from the cows to the vat. They are making the cheese from 350 gallons of milk which yields 36 wheels. The cheese is a Raclette style and melts beautifully. Orphee earned his cheese makers license in Wisconsin and then studied Affinage (aging) with Mons in France. We are all very impressed by this cheese coming from fairly new cheese makers and look forward to any new cheeses from them in the future.
