Blakesville Creamery is a relative newcomer to the cheese world (2020). It comes as no surprise that their ascension to the stars has been guided by veteran cheesemaker Veronica Pedraza. Veronica is making amazing cheese with milk from the farms herd of nearly 1500 Saanen mix goats. The farm itself is pretty special as it is part of the Brico Fund which has a focus on thoughtful land use and environmental protection.
Pecuri in i Vigni is a disk of fresh sheep milk wrapped in white wine-soaked grape leaves. Fittingly, the name translates to "sheep in the vineyard." The cheese texture is fluffy and soft, but also dense and silky. The sheep milk is rich and creamy, with a natural sweetness that is counterbalanced by the fruity and floral notes from the wine.
