The most sought-after cheese in America, PERIOD, Rush Creek Reserve is made by renowned cheesemaker Andy Hatch from the raw milk of his closed herd in Dodgeville Wisconsin. Unlike Pleasant Ridge Reserve, Andy’s award winning Alpine inspired cheese, RCR is only made during a short window where the cows are only eating dry hay and the fat content spikes so significantly that it doesn’t make sense to make hard cheeses. We only see three shipments of this little wonder each year-get while the getting’s good. Banded in spruce cambium and washed with brine, the resulting paste is like a cheese lava lamp: a hypnotizing river of molten cured meat custard.
