West West is, in our opinion, the best blue cheese being made in America. Cult hero Peter Dixon uses homemade starter culture and a 200-year-old gorgonzola recipe to make this epic natural rinded blue cheese. The production process alone takes 2 days – which is crazy – and the results are sublime.
Toasty, sweet, with a spiced, verging on foie gras finish.
