The taste of a perfect cheese can transport you to a different place. When Marisa Mauro at Ploughgate Creamery created the lush washed-rind cow’s milk cheese called Willoughby she had a strikingly beautiful place in mind, Lake Willoughby, a whimsical destination in Vermont’s Northeast Kingdom. Sadly, production halted after a raging wildfire destroyed the creamery, but similar to how fires induce growth and reproduction, so too did Willoughby prosper. Vermont’s prolific Jasper Hill Creamery had been aging this cheese in their caves and believed in it. They took it over to develop throughout all of 2012 and released it as their newest offering in 2013. To our delight Willoughby is absolutely stunning. Its lightly-washed rind imparts a mild and fruity pungency that perfectly balances the sweet and savory supple paste within.
