About Briana

Raw farmstead cow’s milk, washed rind tomme, aged 90 days

Made by Jacobs and Brichford, one of our smallest and most treasured American cheesemakers, Briana is a 3-month aged cheese, made in the style of Fontina Val D’aosta. Wheels are brined, and then washed regularly for their first month of affinage to encourage rind and flavor development – then Matthew Brichford lets the rinds dry out as they age. While this is technically a washed rind cheese, the flavor goal is something more easy going and snack-able than stinky.
Briana makes for a fantastic table cheese, but its real calling is as a melter – it remains nutty and chewy when heated and the terroir of the milk always comes through – deep and meaty, with a barnyard bass note.
Ingredients: Raw cow's milk, cultures, salt.
